You may have heard about Gainesville’s newest dining concept Yume Umē Japanese Kitchen. From the brains behind Dragonfly Sushi in Gainesville and Orlando, these chefs have transformed the former Rolls’n’Bowls into a thoughtful concept of slow Japanese cooking – beyond sushi, teriyaki and miso soup. And did I mention 90% of the menu is gluten-free?
The customizable menu has been well planned with options for meat eaters and vegetarians at an easy price point. The staff is very helpful advising how to blend all these flavors (of marinated, braised, grilled and fried meats and non-meat items) together.
You’ll get a few Dragonfly favorites like the krab & cheese wantons (I hear the Steamed Pork Belly Buns might make their way over) and a menu of craft beers and blooming teas.

I’m also in love with their branding and cute imagery from 160over90. Like the graphics too? They’ve created a small merch section where you can grab printed shirts, hats and sauce bottles to take some of the goodness home.
Yume Umē hopes to franchise their idea; and I think it will do well if the concept is embraced. Heavens knows the food is tasty and it’s a wonderful option for those who have a gluten-free lifestyle without sacrificing on flavor.
